So defined for the shape that resembles that of small ears, they are also called “trailed” or “strascinati”, because traditionally the small pieces of pasta “dragged” with the tip of a knife to obtain a kind of a shell, then turned backwards with the thumb.
The origin of the format comes from Puglia region.
